Vegan Chocolate Chip Cookies

Who doesn't love cookies, especially chocolate chip cookies?


This is my chocolate chip cookie recipe. They are soft, chewy, and loaded with chocolate chips. I've kept the ingredients simple and the steps are straightforward, you don't need to melt the butter or anything. Also, because these are made fresh, you can made batches of cookies in advance and freeze them. As long as you leave them to defrost at room temperature and don't try to microwave them or do anything else to speed up the warming they will have the same taste and texture as when they were first baked.

Vegan Chocolate Chip Cookies


Ingredients:

  • 120g plain flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 113g vegan butter, softened

  • 100g brown sugar, packed

  • 50g granulated sugar

  • 1 teaspoon vanilla extract

  • 3 tablespoons unsweetened almond milk, oat milk or any plant-based milk

  • 180g dairy-free chocolate chips


Instructions:

  1. Preheat your oven to 175°C (350°F). Line a baking sheet with greaseproof paper or lightly grease it.

  2. In a medium-sized bowl, whisk together the flour, baking soda, and salt.

  3. In another bowl, cream together the softened vegan butter, brown sugar, and granulated sugar until smooth and creamy.

  4. Add the vanilla extract and almond milk to the butter-sugar mixture. Mix until well combined.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

  6. Fold in the chocolate chips until evenly distributed throughout the dough.

  7. Using a spoon or cookie scoop, portion out dough onto the prepared baking sheet, leaving some space between each cookie so that they can spread.

  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.

  9. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  10. Enjoy your delicious vegan chocolate chip cookies!


Even though these are cookies and they have relatively high amounts of fat and sugar in them they still have some health benefits. Because these cookies are vegan, they are lower in saturated fat than cookies made with diary. The dairy-free dark chocolate chips in the recipe contain cocoa, which is full of antioxidants known as flavonoids. Flavonoids are associated loads of health benefits, including improved heart health, better blood flow, and potentially lower blood pressure. If you want to make them even healthier you can add nuts to the recipe, you can use ground oats instead of flour or add some oats to the mix and take out some flour. Adding cinnamon and other spices in small amounts will add flavour and phytonutrients.
