Being vegan at Christmas is easier than you'd think and you don't have to cook everything from scratch
The twinkling lights, warm spices and the joy of gathering with family and friends make Christmas a really magical time. I love Christmas, but one of the most special things about it is sharing my vegan Christmas dinner with my family. During the holiday season being vegan can seem challenging, with food and gift-giving always involving meat or dairy, but with a bit of creativity and careful some planning, you can create a festive celebration that’s both delicious and compassionate.
Vegan Christmas Feasting
Delightful Starters
Kick off your holiday feast with some mouth-watering appetisers that everyone will love. For instance, try making stuffed mushrooms filled with spinach, garlic and vegan cream cheese. These can be whipped up in under 30 minutes and are a favourite with my housemates.
Another hit is crispy chickpea bites. Seasoned with garlic powder, smoked paprika and cumin, these yummy little nuggets look great on sparkly serving plates. They are easy to prepare, packed with protein and perfect for snacking before the main event.
Main Course Magic
When it comes to the main course, think comfort food with a twist. A vegan nut roast can be a show-stopper using a blend of almonds, walnuts, lentils and seasonal veggies like carrots and celery. Serve it with a rich, homemade vegan gravy for added flavour. Its pretty common for vegans to serve a nut roast for Christmas and is now a tradition in my family.
If you're looking for a lighter option, consider a stuffed butternut squash. Cut the squash in half and fill it with quinoa, dried cranberries and chopped nuts. Not only is it visually striking, but it also provides a balance of flavours — sweet, savoury and nutty.
Side Dishes to Savour
No holiday meal is complete without tasty sides. A mix of roasted vegetables with sweet potatoes, carrots and Brussels sprouts can really elevate your feast. They taste great, are healthy and they look fantastic, adding colour to an otherwise quite brown plate. Toss these veggies with olive oil and rosemary, roast them for 30 minutes - easy.
You can make your own vegan stuffing using vegetable broth, celery, onions and whole-grain bread. If you are feeling a little stressed, it can be a lot of cooking, a store bought dry mix is fine, everyone is going to love your food anyway.
Sweet Treats
Don’t forget dessert! Christmas pudding, the ultimate must have is everywhere in December. Most of them are vegan, but always check the ingredients. Pair this with oat cream or coconut whipped cream. Alternatively, bake a batch of gingerbread cookies or vegan mince pies to keep the festive mood alive. The cheat way to make vegan mice pies if to use ready-made pastry and a jar of mincemeat, both of which are almost always vegan. Doing it thing way means that you can use the pastry of your choice, filo, puss or shortcrust and you can switch up the filling. This year I'm making mince pies with apple and cranberry!
